Cook An Aglio e Olio In Under 15 Minutes

Gosh, are you wondering what to cook in under 15 minutes, with just 6 ingredients?  Aglio E Olio here we come.  This is a traditional Italian pasta dish originating from Naples and this classic is actually made without onion.  We at KW Select know all too well how from about 3 pm as a mom you start thinking “What can I make for dinner tonight”?  Well like me I pretend to be busy so popping out can be hard when I have undertaken to do work for colleagues and clients.  But I normally have the basics in my fridge or pantry.  If it’s 4 pm and you want to whip something up that is tasty basic and nutritious here you go.  Getting home late also means this meal can be prepared in 15 minutes before load shedding hits at 6 or if the power comes on at 6:30.  This is an Italian classic but as a mom always concerned with eating more veggies so I add my own twist based on what veggies I have in my fridge. 

Why the Odd Recipe for Inspiration?

Well at KW Select, we all go home and we face the same music.  Load shedding, homework and chores and also the cold weather.  I know during cold weather I need comfort food and this meal is simply delish.  KW Select we know the drill all too well.  It’s easy, it’s quick and it’s pretty nutritious and you can hide even more greens in here than you thought possible changing from a traditional to a bit of an exotic meal for your family with 6 ingredients you quite possibly have at home and ready to roll.

What 6 Ingredients Will You Need?

  • A packet of Spaghetti – and if you want to beat the clock at 15 minutes cook the pasta while you make your sauce.
  • ½ a cup of Olive Oil plus a further 2 tablespoons of Olive Oil.
  • 4 Cloves of Garlic, roughly chopped.
  • ½ cup of Green or Red Olives – we all have a few in our fridge.  No Olives, you can try Capers but rinse them first.
  • You can add a few chillies, mild, but I don’t add these because my little girl does not like heat.  So I leave this out and add heat to my own plate when I have dished.
  • ¼ cup of the dry white wine you may already be drinking.
  • ¼ Cup of roughly chopped, fresh parsley from your garden.
  • Salt and ground black pepper to taste.

Prepare Your Delicious Family Meal In Under 15 Minutes?

  • Bring a large pot of water to a rolling boil.  Add salt generously then add your Spaghetti and cook until it is al denete’ and that means it could cook for another 2 minutes.  Keep 2 cups of your pasta water for the sauce that will be underway in a tick.
  • In a nice flat pan or skillet, add the Olive Oil, Garlic and Chilies (which I don’t add) and cook over low heat until the garlic becomes fragrant.  The oil should bubble gently for about 3 minutes.  Be patient with your Garlic – don’t burn it – cook it slowly and let the Garlic infuse slowly and gently.
  • Then add your Olives if you choose, the Parsley and that glass of dry White Wine and gently simmer for another 3 – 4 minutes.
  • Now add your drained pasta together with 1 cup of your reserved pasta water.
  • Cook over low heat stirring constantly until your pasta is cooked through and once all your pasta water has been absorbed.
  • Finish with black pepper and sprinkle salt to taste.
  • You may choose to leave out the dry white wine just add a little more pasta water.
  • I finely grate baby marrow because I like colour in my dishes.
  • Or you can substitute Finely grated Broccoli or switch in some Artichokes.  They all work, but to keep the dish classic you can leave out all the substitutes or additions to keep it simple and authentic.
